This leafy walnut and fruit salad is deliciously perfect for any occasion. It makes for a refreshing summer dish that’s light, appetizing and packed full of flavours.
Talk about goodness overload, this walnut fruit salad has everything to wet the appetite and can be enjoyed on its own or as a side dish.
And yes, I make it on repeat (that’s every season) without fail. It’s become a staple in my household and honestly, between the never-ending requests for chocolates and crisps from my kids, it’s refreshing to know they see this as, I quote, “very yummy mummy”.

The good thing is this salad is super easy to make and can be whipped up in a matter of minutes. Aside from a little chopping and mixing, prep time is virtually zero – okay, 10 minutes to be precise.
Ingredients you'll need
- 2 cups of leafy greens. I prefer to use rocket or watercress but spinach works just as well.
- 2 tangerines or satsumas, peeled and separated
- 1 medium mango, cut into chunks
- 1 medium avocado, skin removed and cut into chunks
- 2 tbsp pomegranate seeds
- Half a cup of walnuts, roughly crushed
- Drizzle of olive oil
- Himalayan salt or taco seasoning (go for the taco if possible, it’ll really add a punch to the salad)
- A dash of chilli powder (optional)
How to make this salad
Honestly, there’s no secret magic to making this walnut fruit salad. Once you’ve peeled, chopped and prepped all your ingredients, just add everything together in a bowl, drizzle olive oil over it and add your preferred seasoning. And that’s it! All there’s left to do is to simply sit back and enjoy the flavors.
What to expect from this salad
Featuring leafy greens, omega packed skin-loving walnuts and avocado, and juicy summer fruits, it doesn’t fall short on expectations. It’s super healthy and filled to the brim with anti-oxidants, and vitamins and minerals (without all the boring fluff of a basic salad!)
Tips to enhance your walnut and fruit salad
1. You can mix and match different fruits, strawberries work fab with this recipe too!
2. Add cheese to take your salad to new heights like feta cheese cut into blocks or crumbled.
3. If you want to have it as an extra filling meal, you can increase the portion size or add cooked chicken, prawns or fish.
4. This salad is best eaten straight away as the olive oil tends to soak through the leafy greens making it soggy.
5. If you’re planning to eat it later, make sure to not mix all the ingredients together after adding everything to the bowl. Just mix it before you eat!

Ingredients
2 cups of leafy greens (rocket, watercress or baby spinach)
2 tangerines or satsumas, peeled and separated
1 medium mango, cut into chunks
1 medium avocado, skin off and cut into chunks
2 tbsp pomegranate seeds
1/2 cup of walnuts, roughly crushed
Drizzle of olive oil
Himalayan salt or taco seasoning

Method
- Prep fruits: Peel, cut and chop accordingly.
- Place the leafy greens into a bowl first.
- Next layer with the tangerines, avocadoes, mangos, pomegranate seeds and walnuts.
- Drizzle with a generous portion of olive oil.
- Season with Himalayan salt or taco seasoning (or any seasoning of your choice).
- If you're after a little heat, add some chilli or cayenne pepper.
- Enjoy!
Notes
- Enjoy this salad cold or at room temperature. I highly suggest eating it within an hour so the ingredients do not get too soggy. You can also customise your walnut and fruit salad by adding chicken, prawns or fish!
